Cross-contamination between raw and ready-to-eat foods is one of the leading causes of foodborne illness in home kitchens. Additionally, improper temperature control during cooking and storage allows harmful bacteria to survive and multiply. By following proper separation techniques and monitoring cooking temperatures with a food thermometer, you can significantly reduce your risk.
Perishable foods should not sit at room temperature for more than two hours. If the ambient temperature is above 32°C (90°F), this time reduces to just one hour. Bacteria multiply rapidly in the danger zone between 4°C and 60°C (40°F to 140°F). Always return cooked foods to the refrigerator or keep them warm at safe serving temperatures to prevent bacterial growth.
There are three safe thawing methods: refrigerator thawing (safest, requires planning), cold water thawing (30 minutes per kilogram), or cooking from frozen. Never thaw food at room temperature, as this allows bacteria to multiply in the outer layers while the center remains frozen. Plan ahead whenever possible and thaw in the refrigerator overnight for best results.
Clean food contact surfaces immediately after use, especially after handling raw meat, poultry, or seafood. Use hot soapy water for cleaning, then sanitize with a bleach solution (1 teaspoon per litre of water) or approved sanitizer. Cutting boards and utensils used with raw proteins should be washed separately from other items to prevent cross-contamination.
Use a food thermometer to verify: Ground meat 71°C (160°F), whole cuts of beef/pork 63°C (145°F), poultry 74°C (165°F), fish 63°C (145°F), and eggs until yolks are firm. Insert the thermometer into the thickest part of the food, away from bone. Colour alone is not reliable for determining doneness—only temperature provides certainty of pathogen elimination.
